Allan is a classically trained master butcher with 25 years under his belt. Allan’s passion and knowledge of the global meat industry is second to none.
Martin has over 25 years experience in the meat industry. Like Allan, he is a classically trained butcher with a masters eye for selecting only the very best.
Our passion and experience for selecting the finest beef in Ireland combined with generations of know how has taught us how to create the perfect piece of beef of outstanding flavour which is rich and distinctive. This skill and method has earned us the reputation for creating the prevailing standard in dry aged beef.
