Connemara is in the West, which benefits from the coastal mists from the Atlantic Ocean, whilst Wexford and Wicklow situated in the East with its mystical mountain passes, lakes and meandering rivers, benefit from the coastal mists from the Irish Sea.
Ireland is widely known throughout the World for its natural sustainability and bio diversity where mountain sheep have grazed these extraordinary lands for generations, and it is from these animals that we select our lambs according to age, weight and fat cover before they are expertly prepared and trimmed by hand to produce our kitchen ready cuts.
